Named after the Latin word for “nourishment”, 1-Michelin Star Nouri is a cornerstone of our local dining scene. With Chef-Owner Ivan Brehm at the helm, Nouri embodies the ethos of Crossroads Cooking, a culinary practice that highlights the connection between food, people and cultures across the globe.

Featuring signatures such as Barbarians’ Head (Turkic Dumplings with Confit Chicken Skin, Beef Consommé, Wagyu ‘Nduja and Jambú), and Boeuf à la Presse (A5 Keisan-Gyu Wagyu Ribeye with White Kimchi and Pressed Beef Jus), Chef Ivan blends tradition with innovation to craft dishes that are bold, artistic explorations of human connection and cultural evolution.

Chef-Owner Ivan Brehm

Chef Ivan, the chef-owner behind the Michelin-starred Nouri (established 2017) and the creative space Appetite (established 2020) in Singapore, is known for his thoughtful approach to food and creativity. Central to his work is “Crossroads Thinking”, a method that emphasises the connections and interdependence of all things. This approach extends beyond cooking, offering a way to foster creativity, innovation, and effective team dynamics by showing how diversity, when understood and integrated into a whole, can lead to remarkable outcomes.

Chef Ivan’s perspective is shaped by his own experiences and insights as a chef, rather than just his background in prestigious kitchens. While his time at places like Thomas Keller’s Per Se, Andoni Luis Aduriz’s Mugaritz, and Heston Blumenthal’s The Fat Duck certainly influenced him, it is his ability to bring together these diverse influences into a clear and innovative philosophy that makes him stand out.
